IWA 5 is the creation of Richard Geoffroy a renowned winemaker who gained fame as the Chef de Cave at Dom Pérignon.
Richard Geoffroy’s pursuit of beauty propelled him to the highest reaches of his profession. Born in the heart of Champagne country, he became the fifth chef de cave for Dom Pérignon Champagne and charted the course of the legendary wine for 28 years.
To Richard Geoffroy, Japan has never been an abstraction. Following an initial spark in 1991, countless trips have stoked his love for the country, its culture and its people.
IWA, therefore, could never be a sake engineered from abroad, a sake bereft of center. In order to be true to sake, and be a true international sake, IWA needed strong roots, anchored in Japan, and to be made according to traditional methods in a brewery of its own design.
ASSEMBLAGE 6
Assemblage 6 is all poise and precision — a refined, linear expression that holds its note from the very first impression to a seamless, lingering finish.
THE NOSE
Deeply coherent, the nose unfolds with a calm, emotive presence. Pear and plum emerge first, joined by a note of green foliage and a backdrop of toasted rice. Layers of nori seaweed and a hint of cacao add depth, bringing both freshness and quiet richness.
THE PALATE
Somewhat drier than Assemblage 5, the palate is sleek and linear, carrying its note with unbroken clarity. There is a natural integration of the fruit, floral, and marine elements. A gentle note of buttery brioche unfurls with aeration, adding textural richness. The finish is long, tactile, and resonant, signature balance and complexity are carried till the very end.
