This Junmai Daiginjo sake is crafted from “Yuinoka” rice grown in Iwate Prefecture, meticulously polished down to 45% to reduce the rice’s protein content. We use pure water filtered through volcanic rock on the Big Island of Hawaii, combined with deep ocean water from off the coast of Kona, rich in minerals.
The result is a refreshingly clean and delicate flavor profile. As a namazake (unpasteurized sake), it offers a gentle sweetness on the palate, beginning with vibrant aromas of pineapple, mango, banana, apple, and pear that delight the senses. Despite its initial fruit-forward fragrance, the actual taste finishes dry, creating a refined balance.
